It's been a while since I've posted a recipe and Thai Green Curry is one of my favourites. I haven't had it since I was young and so I thought I'd put my own twist on it. As some of you may have noticed, I cook with a lot of Quorn. I don't actually remember the last time I cooked with meat and the only time I eat meat is when I buy food on the go. I thought I'd challenge myself to becoming a vegetarian to see if I could actually do it and to see if there is any change in my workout progress. So vegetarian or not, give this curry a go and let me know what you think!

This is my favourite recipe for a Bolognese, with Quorn mince in place of beef mince. Quorn is high in protein, tastes great and is low in saturated fats so I use it wherever I can.
