Sometimes there's nothing I want more than a nice creamy pasta dish. I was about to make my carbonara the yesterday and decided to change things up a little bit. The result? A lovely creamy dish that doesn't break your macro's!
It's been a while since I've posted a recipe and Thai Green Curry is one of my favourites. I haven't had it since I was young and so I thought I'd put my own twist on it.
As some of you may have noticed, I cook with a lot of Quorn. I don't actually remember the last time I cooked with meat and the only time I eat meat is when I buy food on the go. I thought I'd challenge myself to becoming a vegetarian to see if I could actually do it and to see if there is any change in my workout progress.
So vegetarian or not, give this curry a go and let me know what you think!
